I’ve put in 3 days in a row at the Y.  Boy, am I beat! I was so tired today that I actually took a nap–something I very rarely do since it distrupts my night sleep.  Ah, what bliss is a daytime nap!

Then, I got up and cooked a superyummy supper.  Soft Tacos! 

Food Find:  Mission Carb Balance Whole Wheat Fajita Size tortillas. 1pt per tortilla. Found at Kroger in the Mexican food section.

These are quite yummy.  I mean, I wouldn’t just sit down and eat one by itself, but it makes a killer soft taco!  Nice and soft and not too wheaty.

My technique–I don’t use a recipe, so I don’t dare call it that!

“Spanish” rice–1 cup of medium grain rice (should be using brown rice, but I’m out), 2 cups of water, a blog of tomato paste, salt and chili powder.  Bring to a boil for a minute or two, cover and set to low for 17 minutes.  As with all rice, don’t uncover the pot till it’s done. 4pts. for 1 cup cooked, but I definitely don’t use a cup in my meal–maybe 1/2 cup, so 2pts.

I brown up some chopped onion with Laura’s Lean Ground Beef (I get this at Kroger), 8% Fat.  I season with chili powder, seasoned salt, cumin, mexican oregano, paprika, garlic powder and black pepper.  If the kiddo is not eating it, I’ll add crushed red pepper, too.  About halfway through, I drain as much fat off as possible. 4pts for 4 oz.

I empty a can of fat free pinto beans into a microwave pot and heat them up.  Then I get my nifty immersion blender out and turn them into “refried” beans–or pureed beans as it were! 1 pt per 1/2 cup serving

I happened to have 3 ears of fresh corn on hand. I sliced all the kernals off and cooked them in a little water and salt.  Can you say delish?

Toppings include:  Shredded Lettuce (0 pts), reduced fat sour cream, 2tbsp (1pt), 1/4 cup of shredded mozzerella cheese (1pt), Salsa (0 pts)

So my soft tacos look like this, in no particular order, LOL. I eat two of them.

1 tortilla, topped with shredded lettuce, 2tbsps of beans, 1/8 cup of ground beef, 1/8 cup of cheese, 1/8 cup of corn, 1tbsp of sour cream, salsa, and 1/8 cup of spanish rice

By my count that’s about 9pts, give or take a point, for 2 overstuffed soft tacos.  I’ll take pictures next time I make them.
